Gastronomy can be interpreted in various ways, but SOA considers gastronomy to be the creation of new foods.
When proposing the creation of new foods as a form of gastronomy,
we used the word “soil” as a symbol of the origins of food, and called it “soil gastronomy.”
SOA's soil gastronomy aims to create new foods.

So what kind of new foods are we aiming to create?

Food is something we do every day, and it is what connects us to life.

When we delve into the concept of food,
it is something we do every day and something that sustains life.
For all living beings, including humans and animals, the act of consuming energy—that is, eating—is something they cannot avoid.
The ultimate and sole goal of life is the survival of the species, and thus the desire for food becomes a fundamental desire.
Therefore, life and the act of eating are inseparable, and the intensity of this desire is so profound that it is believed to influence evolution.

As creators at the forefront of food that can influence evolution, what should we do?

Creating a new food experience that has never existed before is believed to influence human evolution.
If that is the case, as SOA, our mission is to elevate food—essential for sustaining life—by imparting new value through various technologies,
and to express environmental and food issues through food as art.
We believe that many people who experience this will become more interested in these issues and perceive them as their own,
which will lead to leaving a better global environment for the next generation.
And we believe that this is the mission of those who engage in gastronomy.
